Mahshi is a popular Middle Eastern and North African dish featuring vegetables stuffed with rice, vegetables, and meat. When you're served this labor-intensive meal, you know your host things you're special. Today, Chef Hisham is stuffing kousa (zucchini) and batinjan (eggplant) with rice, ground beef (vegetarian also available), and his special mahshi spice-mix, cooked in a garlicky red tomato sauce. Each portion consists of two each kousa and batinjan mahshi served with a chopped vegetable salad with inspired ingredients.
